Indian Cashew Pie

Indian Cashew Pie Recipe

Ingredients:
  • 3 large eggs, beaten
  • 1 cup (250 ml) light corn syrup
  • 1/2 cup (125 ml) sugar
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1/4 teaspoon (1 ml) salt
  • 1/2 teaspoon (2.5 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) ground nutmeg
  • 2 tablespoons (30 ml) butter or margarine, melted
  • 1 cup (250 ml) chopped roasted unsalted Cashew nuts.
  • 1 tablespoon (15 ml) flour
  • Unbakked 9 inch (23 cm) pastry shell
Recipe:

Combine first 7 ingredients. Mix well. Add butter or margarine. Mix cashew nuts with flour and stir into the mixture. Turn into unbaked pastry shell. Bake in a preheated hot over (400 F or 200 c) 15 minutes. Reduce heat to moderate (350 F or 175 C) and bake 40 minutes or until knife inserted in the center comes out clean.

Yield: One 9 inch (23 cm) pie
