Indian Cashew Drop Cookies

Indian Cashew Drop Cookies Recipe

Ingredients:

  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 cup (2 sticks / 250 ml / 60 gm) soft butter or margarine
  • 1 cup (250 ml) sugar
  • 1/2 cup (125 ml) finely chopped salted cashew nuts
  • 1 large egg
  • 2 cups (500 ml) sifted all purpose flour
  • About 4 dozen whole cashew nuts
Recipe:

Blend together the first 2 ingredients. Gradually add sugar. Strin in cashew nuts. Beat in egg. Gradually stir in flour. Drop from a teaspoon onto ungreased cookie sheets 2 " (5 cm) apart. Top each with an cashew nut. Bake in preheated moderate over (375 F or 190 C) 7 minutes or until lightly browned around the edges. Cool cookies on wire racks. Store airtight.

Yield: 4 dozen cookies
